Chocolate cupcakes
Ingredients
1 1/3 cups all-purpose flour
¼ teaspoon baking soda
2 teaspoons baking powder
¾ cup unsweetened cocoa powder
1/8 teaspoon salt
2 tablespoons butter
1 ½ cups white sugar
2 eggs
¾ teaspoon vanilla extract
1 cup milk
Method
Preheat at 350 degrees Fahrenheit. Set the cupcake pan with liners. Sieve the flour, baking powder, baking soda, cocoa and salt.
Beat the butter and sugar till it’s fluffy. Stir continuously and add the eggs and vanilla extract. Add milk and alternate by adding the flour.
Set in the oven for 17 minutes. Allow it to cool and then frost with your favorite frosting when cool.

Chocolate fudge cupcake
Ingredients
1 ounce semisweet chocolate, chopped
1 cup
1 cup all-purpose flour
1 ¾ cups white sugar
1 egg
1 teaspoon vanilla extract
2 cups chopped pecans

Method
Preheat the oven at 350 degrees Fahrenheit. Set the cupcake pan with liners. Heat chocolate and butter in a double boiler, until smooth and let it cool.
Sieve flour and sugar, then beat eggs while in the mixer. Pour the chocolate mixture, vanilla and pecans.
Bake it for 25 minutes in the oven. Allow them to cool. Frost with any flavor of frosting you like.

Chocolate carrot cupcakes
Ingredients
3 eggs
1/3 cup milk
2 cups grated carrots
¼ cup applesauce
2 tablespoons canola oil
½ teaspoon vanilla extract
2 cups all-purpose flour
1 ½ cups white sugar
½ cup unsweetened cocoa powder
2 teaspoons baking soda
½ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup semisweet chocolate chips
¼ cup dried cranberries
Method
Preheat the oven at 350 degrees Fahrenheit. Set the cupcake pan with liners.
Whip carrots, eggs, milk, applesauce, canola oil, and vanilla extract together. Sieve flour, sugar, cocoa powder, baking soda, salt, and cinnamon, and combine the two. Fold chocolate chips and cranberries into batter.
Bake it for 25 minutes. Once it’s cool, garnish it with you favorite type of frosting.
